Smoky Beans & Greens

Serve this nutrient-packed dish with whole grain toast points or over rice for a quick and easy weeknight meal.

4 - 6 Servings

INGREDIENTS:

1 large onion, diced
2 tablespoons olive oil
1 tablespoon smoked paprika
4 cloves garlic, minced
1 ( 6 oz ) can tomato paste
2 ( 15.5 oz) cans garbanzo beans (chick-peas), drained and rinsed
*1 pound leafy greens (spinach, collard, mustard, beet, kale or Swiss chard), chopped
Salt and pepper to taste

 *Note: Remove any thick, fibrous stems and ribs from the greens. Softer ribs or stems can be chopped and sautéed with the onion.
 

DIRECTIONS:
In a medium-sized pot, heat olive oil over medium heat. Saute onion, stirring occasionally until soft and translucent. Add in the smoked paprika and garlic. Cook, stirring occasionally, for 1-2 minutes more. Add tomato paste and garbanzo beans, gently mixing contents to coat all the ingredients with the tomato paste. Add the greens, sprinkle with salt and pepper and cover to let steam for about 2 minutes. Stir the wilting greens into the bean mixture and allow to cook, stirring occasionally, until the greens are completely wilted and cooked through.
