Easy & Delicious Date Truffles

These bite-size treats deliver indulgence – soothing your sweet tooth and chocolate cravings.

Ingredients:

Truffles:
1 pound Medjool dates, pitted
4 tablespoons good quality cocoa powder, or to taste
1-2 tablespoons water
Chopped nuts (optional)

Note: If you want to give the truffles a little crunch and texture inside, add some of the ground nuts or seeds to the date paste.

Coatings:
Melted dark chocolate
Shredded unsweetened coconut
Finely chopped nuts or seeds or hemp seeds

In a food processor, place dates, cocoa powder, in processor bowl. Pulse ingredients until well combined and a thick paste is formed, scraping down sides and adding water as needed. (No water may be needed – or additional water may be needed – depending on how moist the dates are.) Roll into 1-inch balls and then roll in selected coatings. Store in an airtight container in the refrigerator for up to 2 weeks.
